Zucchini Slice

One of the things I love about kids is that if you call something a cake they will eat it.  Or maybe that’s just my kid.  Either way this “vegetable cake” was a big hit in our house.  Such a big hit that I forgot to take photos.  Maybe next time.

Ingredients

  • 1/2 onion (roughly cut)
  • 175g short cut bacon (roughly cut)
  • 2 small zucchini (roughly cut)
  • 1 small carrot (roughly cut)
  • 1 small red capsicum (roughly cut)
  • 1 garlic clove
  • 130g self raising flour
  • 5 eggs
  • 75g low fat tasty cheese (smallish dice)
  • Salt and Pepper

Directions

Preheat oven to 170 degrees.

Put cheese in Thermomix and mill for 6 seconds on speed 8.  Set aside

Add the carrot and capsicum and press the turbo button until very roughly chopped, add the zucchini and turbo again until chopped to a small size. Set aside

Put onion, garlic and bacon in Thermomix and pulse the turbo button a few times until it chops the mix to a small size.  Add 15g olive oil and saute with the mc off at 100 degrees on speed 1 for 5 minutes

Once this is done drain any liquids that have come out of the vegetables.  Add the vegetables into the Thermomix, with the flour, cheese and eggs.  Mix on reverse at speed 4 for 20-30 seconds.

Pour into a greased 22 x 30 cm dish and bake for 30 – 40 mins until set and browned
