Southern Style Cabbage

OK. So this is going to be another post with no pictures, because cabbage…… possibly one of the unsexiest vegetables ever. And before anyone says anything (but please feel free to leave a comment or three – I’m feeling a bit lonely in here) I know that the *other* trinity is to fry cabbage, butter and bacon. And I’d happily eat it like that except that my personal trainer frowns upon eating that kind of food too often.

Ingredients

  • 1 head of cabbage, around 2cm slices
  • 1 large garlic clove, chopped
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon of flavored salt (I use a roasted garlic salt, but other flavors would work too)
  • Fresh black pepper
  • 1½ cups chicken stock

Directions

  1. Heat butter and olive oil in a large pot on a medium heat
  2. Cook the garlic until fragrant, around 30 seconds-1 minute
  3. Add 1/2 teaspoon of salt
  4. Add the cabbage and toss through to coat thoroughly with the oil/garlic
  5. Add the stock and bring to a simmer
  6. Place lid on pot and simmer for 10 minutes. Check that the cabbage is tender, yet firm. Simmer for another 2-3 minutes if needed.

This is a simple, but delicious dish, which can be made even more delicious with the addition of sauteed onions, chilli flakes or red pepper flakes, and bacon or speck. As written this is a low-calorie, low-carb side dish.
