OK. So this is going to be another post with no pictures, because cabbage…… possibly one of the unsexiest vegetables ever. And before anyone says anything (but please feel free to leave a comment or three – I’m feeling a bit lonely in here) I know that the *other* trinity is to fry cabbage, butter and bacon. And I’d happily eat it like that except that my personal trainer frowns upon eating that kind of food too often.
Ingredients
- 1 head of cabbage, around 2cm slices
- 1 large garlic clove, chopped
- 2 tablespoons butter
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon of flavored salt (I use a roasted garlic salt, but other flavors would work too)
- Fresh black pepper
- 1½ cups chicken stock
Directions
- Heat butter and olive oil in a large pot on a medium heat
- Cook the garlic until fragrant, around 30 seconds-1 minute
- Add 1/2 teaspoon of salt
- Add the cabbage and toss through to coat thoroughly with the oil/garlic
- Add the stock and bring to a simmer
- Place lid on pot and simmer for 10 minutes. Check that the cabbage is tender, yet firm. Simmer for another 2-3 minutes if needed.
This is a simple, but delicious dish, which can be made even more delicious with the addition of sauteed onions, chilli flakes or red pepper flakes, and bacon or speck. As written this is a low-calorie, low-carb side dish.
